On this cold and blustery night, I had a craving for a childhood favourite. It's very fast and easy to make. We like it best hot; almost right from the oven: A light chocolate cake, with pudding magically beneath.
1 cup flour
2 tsp baking soda
1/4 tsp salt
2 tbsp cocoa
3/4 cup sugar
1 cup chopped nuts (optional)
1/2 cup milk
2 tbsp oil
3/4 cup brown sugar
1/4 cup cocoa
1 3/4 boiling water
Mix together flour, powder, cocoa and optional nuts then stir in milk and oil. Spread mixture into a 9x9 pan.
Mix together brown sugar and cocoa. Sprinkle on top of cake batter.
Pour hot water over batter/topping.
Bake at 350' for 45 minutes.
Let cool slightly.
You can serve with ice cream.
